Kitikmeot Foods was established in 1990, it is located in Cambridge Bay, Nunavut. Cambridge Bay is located on Victoria Island, 500 miles north of Yellowknife. It has a population of 1300 and growing. The Inuktitut name for Cambridge Bay is Iqaluktuutiak which means "Fair Fishing Place".
Kitikmeot Foods processes all year round. During the Spring, Summer and Fall, which only lasts from July to September, they have their fishery. Their main product then is Arctic Char.
Kitikmeot Foods employs local fishermen to fish the surrounding rivers of Cambridge Bay. The rivers range from 30 to 100 hundred miles away. In order to keep the fish fresh, they fly the fish back from the rivers with Adlair's Beaver plane. The Beaver can carry up to 1200 pounds each load, and there can be up to five loads a day. The fishermen catch the fish in two different ways, weir and net. Weir fish is a higher quality fish; it doesn't have all the markings from the net.
In the winter months from October till March, Kitikmeot Foods has their Federally Inspected Muskox Harvest. Local hunters are hired to go out on the land.
Since the Muskox is federally inspected, it can be sold internationally. During the Muskox harvest there is an inspector in the plant and on the land full time.
